Prosciutto Crudo Italiano
The traditional and famous dry cured ham from Italy. Medium aged so its easy on the palate. Sliced super thin so it melts in your mouth.
Genoa Salami Piccante
Salami Piccante is a spicy salami with red peppers and several varieties of paprika. It’s hot, but not so much that it overwhelms the great flavor of artisan cured salami. Salame Piccante translates to “spicy salami” It compliments a crostini made from our Beautiful Rustic Baguette and topped with a little Horseradish Mayo.
Capocollo Extra Lean
Low in saturated fats without compromising the flavor. A wonderful cured meat that has a relatively low intensity and liked by most. Be sure to add a little of our inhouse Dijon Grain Mustard to give it a little bite.
Queijo São Jorge ( S. Jorge Cheese)
Queijo São Jorge is a cheese from an island of the same name, located 900 miles from the west coast of Portugal and part of Azores archipelago. Made from raw cow’s milk, São Jorge is a robust, aged cheese ripened for between three and seven months before being sold in the market. The DOP cheese is matured for a minimum of 90 days but the wheels can be sold at different ages; three, four or seven months.
São Jorge has a firm, slightly waxy texture that envelops an open, straw-coloured paste. Flavours are mild, full and buttery with tangy, spicy undernotes.
Le Douanier – Quebec
A semi-soft cheese with a washed and brushed rind. This variety is left to ripen for more than 9 weeks. The cheese features a signature central line of edible vegetable ash. With its earthy aroma and organic flavour, Le Douanier tempts the palate with a hint of nuts and green apple.
